that is because the MacTeX is completely prepared in advance, no 
installation (i.e. packages to unpack and place in the TDS tree).
It is a full installation that has been compressed plus som integration 
(as far as I know).

We could to the same on Linux, but then you would have no choices any 
more, or carrying out the choices will be much harder.

But yes both a full TeXLive and a full MikTeX take a very long time.

We had some users that were installing TL2008 from a CD on their laptops 
(windows), after a few hours they were only half way.

It seems to go a bit faster to copy the relevant contents of the DVD to 
the harddisk and install from there.
