i assume they should, but it is possible that there's a bug which makes
the format files platform-dependent. at least, the endianness of
sparc-solaris and the other 2 platforms (i386-linux and universal-darwin)
is different, which may be causing a problem.

i don't know where are the log files saved, if generation fails.
but you could try to run it manually by running one of the commands
which fmtutil reports it is running:

luatex -ini   -jobname=dvilualatex -progname=dvilualatex dvilualatex.ini
luatex -ini   -jobname=lualatex -progname=lualatex lualatex.ini
luatex -ini   -jobname=luatex -progname=luatex luatex.ini
luatex -ini   -jobname=dviluatex -progname=dviluatex dviluatex.ini

and then you should have all files created in your current directory.
