Did you check the list archives for the TeX on Mac OS X mailing list
(should find it w/ a search on www.google.com)? I've posted some fairly
detailed commentary on this in the past. If you can't find it, drop me a
line and I'll dig them up the next time I'm booted into OS X.

Basically you either need to switch to a font using a standard encoding,
or make use of a program which can make use of encapsulated files in a
non-native encoding.
