The fink distribution of teTeX is not the most up to date, but it does
have listings.sty in it.  Try doing 'fink update tetex' and see what
happens.  If it works, it may be your easiest route.

Also, do `locate texmf.cnf` and look at that file, and it will make a
lot of what sounds difficult and painful more obvious.  It's really not
as bad as it may sound.
