There are quite a few settings you can adjust. However, from texmf.cnf:

% Memory. Must be less than 8,000,000 total.

That is 32 millions words of memory. The maximum allowed, with  
everything included, is 8 million words.

How much physical or virtual memory that equates to depends on your  
computer (16, 32, 64 bit etc.)

Don't know. But can't you output to pdf or something from GNU plot?
