/us/texbin is a symlink to any of the modern TeX distributions on  
Mac: gwTeX-2003-2005, gwTeXLive or TeXLive-2007 (a.k.a. MacTeX):

Front-ends ---like TeXShop, iTeXmac and Carbon Emacs--- set the path  
to this symlink (/usr/texbin), and you choose which distribution you  
want to use in a control panel in System Preferences, a mechanism  
devised by Gerben Wierda and Jerome Laurens to allow you to have more  
than one TeX distro.

That said, if pdflatex is not recognized, then either your TeX distro  
was indeed removed by a system upgrade (as you say above) or is too  
old. Either way you should download at least one from the addresses  
above.
