Just pick an editor and do as you do on Windows. Kile is pretty similar 
to WinEdt. Otherwise Emacs+AUCTeX is popular.

As previewer there are xdvi, xpdf, gv, etc. Even Acrobat Reader is 
usable under Linux because it does not lock the file.
