Ah, we are using different terminology : I used "Save as XML",
which gave

<w:wordDocument w:macrosPresent="no" w:embeddedObjPresent="no" w:ocxPresent="no" xml:space="preserve">
<w:ignoreElements w:val="http://schemas.microsoft.com/office/word/2003/wordml/sp2"/>

According to your first link, this indicates that it /is/ "WordML",
even though the "Save as" option is labelled "XML".
