To proof-read, not only a larger font size is convenient, but also a larger leading (baseline skip), and you can do it with a simple line *after* \begin{document}, say:

\fontsize{12}{20}\selectfont

You can experiment with that, and also consult with your copy-editor at the publishing house; then, after the copy-editing is done, just delete that line for the final formatting.
