My first exposure to LaTeX came from a course on formal language
theory; lots of Greek letters, and lots of mathematical notation.  Of
course, LaTeX does a very good job with this kind of material.  Once I
discovered how easy it was to typeset math with LaTeX, I was
completely hooked.

If my memory serves me correctly, the first things I wanted to learn
about LaTeX were

  - how to typeset math

  - how to create basic document structures (headings, lists, and
    such).

  - how to incorporate graphics (graphicx)

  - how to change margins (geometry), and how to get block-structured
    paragraphs (parskip).

Depending on your audience, these may be appropriate topics for an
introductory talk.
