You can use whatever editor you like. Get another one if you don't
want texstudio.

Miktex is trying to install the package for all users (I don't know
why in your system it doesn't install only for the user) and needs
the permission. It shouldn't do harm to allow it, but if you don't
want it:

Open the miktex package manager (without the (admin)), choose
pgfplots and click on the + to install it.
