Walt,

Axel is correct. 

TeXShop is a front end to TeX. When it
typesets, it says to pdflatex or another engine “here’s a source
file; typeset it and call me when you are done. In the meantime,
I’m going to take a little nap.”

MacTeX installs the full TeX Live, which is the same
on all platforms.

The solution to this font problem is to ignore TeXShop
and return to the Unix world.
