Ah, that's the thing. FontBook is a Panther program. Same with the Font 
Tools package, apparently.
Overall, XeTeX seems to work perfectly with Jaguar.

Oh, yes, forgot about this one. Stacked diacritics would be really 
useful to note both tone and nasalisation (tilde and accent) but the 
option is interesting.

Ah, but poor students rarely buy fonts... ;-)
