[XeTeX] "I can't find the format file `xetex.fmt'!"

After removing the files from ~/Library/texmf/web2c/, I would advise:
- Making sure you used the latest TeX i-Package to install TeX. If
you did, then run the Configure stage only; if you get a sheet
mentioning system-wide or per-user configuration, choose the option
to remove per-user configurations. If the i-Package from which your
TeX has been installed isn't the latest one, then update it and re-
run the install completely (removing also per-user configurations if
asked).
- Reinstall XeTeX using either the latest .pkg installer or the
latest i-Package.
While installing (both TeX and XeTeX), I would advise putting ~/
Library/texmf/ out of the way (ie displace it somewhere else), and
only after the complete install putting you personal additions in
place one by one, running updmap-sys if need be.
