You do not need to type these TeX constructs from a 7 bit world! Just  
type ï or ë or ü or ...

If you want to continue to use these complicated things you can use  
xunicode.sty which makes the translation from 7 bit to Unicode. It is  
part of a Xe(La)TeX installation.
