This should be covered (IIRC) in the XeTeX-Notes document, whereever
that happens to live these days. XeTeX-Reference (or xetexref) also
has a brief description.

You want something like this:
  \font\x="Gentium:color=AABBCC;+onum;script=gena"
or whatever.
