Evince can correctly render documents which do not have embedded fonts.
You do need to have suitable substitute fonts available, of course, but
pdf has always supported non-embedded fonts and all pdf readers do too.
The quality might not be the same, but embedding even subsets of CJK fonts
can bloat document sizes far beyond comfort.
