[XeTeX] Xetex doesnt display chinese characters in fonts that should have them

  Yes, use a group.  {\fontspec{fontname} [chinese character]}

  There are no Chinese characters in Bistream Vera.  The other
applications you mention must be displaying them using some other fonts
(I'm surprised that OpenOffice does that, though).
