Gerrit,
Have you checked out the documentation for the fontspec package (designed to
work with, and distributed along with, XeTeX)? It has much info about using
AAT or OT features with CJK typography including a vertical example. I
don't know any CJK languages myself so I can't say anything more about it,
but there is a lot there. See section 6.11 and following in the
fontspec.pdf
