[XeTeX] XeLaTeX generated pdf metadata

Could you try including this in your preamble:
\usepackage{hyperref}
\hypersetup{pdfcreator=XeLaTeX with hyperref}
and compile and see if the resulting PDF is sufficient for your purposes.

explains these options in full.
